Three Months and Stumbling Along The Way

It’s been exactly three months since I committed to not eating meat and I still love it, most of the time. I haven’t been getting tempted even though the boyfriend has been eating more meat. But, I am realizing that this diet requires more than just not devouring meat.

I am quickly learning that I have to eat to fuel my body. We all know meat is a great source of protein, so I find myself trying to amp up my protein intake eating more eggs and lots more black beans. It’s not so bad. I just have to be more creative because eating scrambled eggs every day sucks and while the boyfriend really likes my home-made veggie burgers made with black beans, he doesn’t care to eat them more than once a month. I get it.

Last weekend, I made my very first quiche made with egg (of course) onions, green peppers, mushrooms, shredded carrots and a little bit of cheddar cheese. If you have never made one, it is super easy and delicious. I will also be making some black bean and corn quesadillas tonight.

I am also learning that in addition to changing your diet, in many cases, you have to change the places where you eat. For me this lifestyle is giving me the opportunity to be more creative with my recipes, but also teaching me how to live a healthier life. But, I can’t expect to eat at the same places or eat the same items if I want to maintain this lifestyle. I learned this the hard way as I was devouring my jalapeno poppers and got the sneaking suspicion it had bacon in it. It did and honestly, it wasn’t something I thought about before I purchased it. I never needed to before this and that showed me that I definitely have to be more conscious about my food selections.

In case you are wondering, I am still not sure whether I plan on maintaining this lifestyle forever. All I know is it’s working and I like it. I also really want to make some more changes in my diet. I really really need to cut down my intake of cheese and dairy products, but mostly cheese. I am not going to lie, I grew up thinking it made everything better and clearly that is true, but I still have to slow it down. Also, I got to get my sweet tooth in order. I really want to lose weight along the way and devouring sweets every chance I get is not going to help.
