I love a good smoothie.
There is something about starting my day off with not only fresh fruit, but fresh vegetables.
I secretly think it adds a little pep in my step.
Or at least it did when I was starting every morning off with one. That was when I lived in Delaware and to be honest, I miss them. I really do.
You are going to think I am crazy, but I can feel the difference in my body. Something just feels off so it will be nice to get back on the smoothie wagon.
While I typically do green smoothies made with spinach or orange made with carrots, I wanted to try something different after seeing a deep blue bottled smoothie left in my love’s car.
I tried my best to mimic that deep blue color so I mixed blueberries and plums with a whole cucumber. It’s not blue, but I still love the deep purple color.
The good thing about the cucumber is it has both a light and refreshing taste that adds something special. I also like adding cucumbers to smoothies because I find that it helps with my dry mouth. I am not sure if this is a thing or an actual benefit of it cucumber, but I know that it helps me feel less dehydrated even though I drink water all day.
Ingredients:
– 1/2 cup of blueberries
– 1 sliced plum
– 1 sliced cucumber
– 1/4 cup of cranberry juice
Directions:
– Slice the plums and cucumbers into bite sized pieces
– Add to food processor with 1/4 cup of cranberry juice
*I like my smoothies on the thicker side, but if you like yours more loose, just add a little more juice
