Veggie Sloppy Joes

I’m not going to lie, when my love said he wanted to stop eating meat for a month, I was pretty excited.

Of course, I didn’t want to let him know that because we’ve been down this road before. It was him who suggested we stop eating meat last July.

We were both going strong until a boys trip to Texas and from the way he tells it, everything is better in Texas.

Anyway, naturally, I went into planning mode. I began scouring the circulars for deals, checking my cabinets to see what we had and what we needed.

I am proud to report that he is close to his month goal and while he is enjoying the diet change, he is also feigning for some meat. Sound familiar?

Secretly, I really hopes he stick with it even with the occasional cheat day. I really don’t think I could call myself a good fiancé if I didn’t want that for him.

I mean, yeah, it would be nice to not have to worry about someone tempting me with bacon. But as my future husband, I also want him to take his health into his own hands and some added veggies and varied protein would only help the situation.

That’s why I was determined to make him some veggie sloppy joes, which he loves. Back when we were living in Reading, PA, we survived off of them.

Call me sneaky, but I wanted him to learn something it took me a while to figure out, veggies are versatile. Not only that, when you transform them into a meat-centric dish, they kick some major butt.

Ingredients:

– Bold Sloppy Joe mix
– 1 large carrot
– 1 medium onion
– 1 medium green onion
– 1 cup of corn
– 1/4 cup of lentils
– 1/4 cup of black beans
– seasoning: black pepper, season salt, garlic powder, minced onions

1. Rinse off the black beans and let soak for at least an hour. Lentils do not need to soak. Cook together on medium heat until soft.

2. Rinse your vegetables and chop them into bite-sized pieces.

3. Sauté all of the vegetables in a pan seasoning to your liking.

4. Mix the black bean and lentils with the vegetables.

5. Add in the Bold sloppy joe mix and let simmer for approximately eight minutes.

I ate mine on a kaiser roll with french fried onions. Enjoy!
